A little bit about some of the people who contribute to our pages.

Linda Forster - Founder

Linda is the founder of Gluten Free UAE and also mum of Aili who has Celiac disease. Aili is the very reason Gluten Free UAE was started. Linda runs a gluten free house and is hoping to spread awareness about Celiac disease and its symptoms. 

"Hopefully noone else will have to suffer like we did" she says. 
When Linda isn't busy managing facebook, twitter and running the website, she is trying to think up the next event, emailing companies asking for ingredients to review or doing research about gluten. She is hoping to set up training sessions for restaurant staff across UAE. Gluten Free UAE is almost becoming a full time job (without the pay!) so offers of help are always appreciated. Daniela Maitland-Walker - Admin/Research/Events

Daniela was diagnosed with Coeliac disease and IgA deficiency in June 2011. Her diet is very “clean” and needs to be chemical and additive free due to her being extremely sensitive not only to many different types of food but also environment.
Her passion is to help others through her own experience. Her dream is more people to be able to connect to themselves and find a way to live the life they always wanted despite their health challenges.

Daniella helps Linda in collecting information for the website and also contributes to the Gluten Free UAE blog posts and helps in organizing our events. 


Samantha Amai - Reviews

Samantha is from Australia and has a young daughter with Gluten Intolerance (Possibly Celiac).
Samantha has just relocated back to Australia from Abu Dhabi but will still be involved in doing work for Gluten Free - U.A.E. Samantha got the book reviews section on the website started and all the reviews there so far have been done by her. Samantha is currently studying fulltime for an Advanced Diploma in Nutrition and an Advanced Diploma in Naturopathy.

Beatrix Szarka

Beatrix is from Hungary and has been living a Paleo lifestyle since October 2010. 
She came to Dubai in the Summer of 2011. Not long after arriving she started a blog paleodubai.wordpress.com to share recipes and the experience of running a family and raising children with a Paleo diet. She likes to cook “normal” food and is always thinking about how to cook them Paleo. 

Not eating gluten (besides not eating dairy, sugar, processed food etc… ) was a choice for her, defiantly a good one, to live a (better) quality life. When she is not in the kitchen,  she likes to play with the kids, or go to the gym, because diet alone is not enough to stay healthy.

Diana Ghazzawi

Diana has been cooking since she was about 11 years old, using whole, natural foods almost exclusively, an outlook on cooking and nutrition which she learned from her family. In 2010, soon after discovering she is gluten intolerant, she started Free Kitchen, a blog that archives the dishes she cooks. Though her favorite cuisine is her own Arab one, she does cook dishes from a variety of traditions, as well as ones she improvises. The goal of Free Kitchen is to show that gluten-free cooking is not restrictive or complicated, and that many recipes are naturally gluten-free. The dishes are labeled according to the other allergens they are free of, so that readers can decide what fits into their nutritional needs.
Diana’s mission is to raise awareness of gluten intolerance, a serious condition which is very common and easily treated by a gluten-free diet, but which goes undiagnosed in almost every person who has it. 

Angela Coleby

Angela is from the UK and has fully embraced a low carb, gluten free and natural lifestyle this year (2011).  She wants to show others that eating healthily is easy, fun and delicious. Along with scrumptious recipes, she also advocates using everyday kitchen items as part of your beauty routine to create clean and green products, and shows you how you can use natural ingredients to clean your home.  She gives cooking lessons in an informal setting to spread the message of healthy eating, in addition to working full time as the most unlikely accountant you will ever meet. Anja Schwerin

Anja  is the creative mind behind Anja’s  Food 4 Thought. She is convinced that the food you eat is the root of your well-being.  When not busy juggling family life with two small kids, you’ll find her cooking, photographing or writing about healthy foods. If not found in the kitchen either, she is probably out running to prepare for the next marathon.

Kristy-Lee Biggs

Kristy has always been wheat intolerant. Whether or not she paid attention to that intolerance throughout her life has determined her overall wellness. Although not gluten free, she finds the principles and methods of gluten free eating help to guide her habits and she hopes to share her cooking with the wheat-munching population of Dubai to show them it's not that bad! Kristy is currently teaching English at an IB school, and when she escapes the classroom, she's either cooking, eating, or attached to the back of her camera.
